Panxa celebrates 5 Years with “Land of Enchantment”

A Long Beach staple and pioneer in introducing the culinary traditions of New Mexico to diners in Los Angeles, Panxa Cocina is celebrating its milestone 5-year anniversary in January. Accomplished Chef and Owner Art Gonzalez is celebrating with a month-long of “Land of Enchantment” experiences to kick off 2020 and celebrate the special occasion. “When I first opened Panxa we were setting out to bring a whole new type of cuisine to the food scene,” says Gonzalez. “Today we have made strides in educating and enlightening the community about the culture, tradition, and vibrant flavors of New Mexico which are still very new to the food scene in LA.”

The “Land of Enchantment” festivities at Panxa will kick off with an exciting collaboration with Long Beach-based Beachwood Brewery. This award-winning brewery is known for its locally-made, distinctive West Coast-Style IPAs, superior quality stouts, and finely crafted brews by brewmaster Julian Shrago. Inspired by its New Mexico-based roots a hatch-chile infused IPA aptly named “Down the Hatch” will be exclusively crafted and served at Panxa’s bar and dining room for a limited engagement. The IPA pairs perfectly with the Grilled Pork Shank, Albondigas con Spatzle or Burrata and Pork Adovada.

The celebration will continue throughout the month of January as Panxa highlights the respected purveyors and artisans of New Mexico. At the top of that list is Gruet, nestled in New Mexico wine country, this family-owned and run winery was founded by Laurent Gruet in 1984 and specializes in Methode Champenoise sparkling wines. In commemoration of the 5-year anniversary, Gruet will be served paired with a special anniversary Naked Cowboy “Apache Moon” Full Dozen Oysters and Gruet Brut bottle ($50); and a Half Dozen “Apache Moon” Oysters paired with a glass of Gruet Brut ($25).

Panxa Bar Director, Greg Goins, will craft the perfect brunch cocktails just in time for brunch season which is now served daily Monday through Sunday at Panxa. Integrating Gruet’s sparkling wines to pair with Panxa’s signature brunch favorites such as the Blue Corn Piñon Pancakes as featured in Food & Wine Magazine, diners will enjoy a handcrafted tipple created by Goins including the French 77 with Nolet’s Gin limoncello, lime, and Gruet ($13). Also in January and in time for “Veganuary,” Panxa introduces several new vegan dishes to the menu including Totopos and the Southwest Bowl featuring ancient grains, mushroom broth, avocado, and a tomato vinaigrette all sourced from local Farmlot 59. Diners will have a chance to celebrate all winter long as Panxa celebrates its 5-year anniversary in time with the start of 2020.
